Catherine Seo, PhD, Founder & CEO of Lipedema Simplified & The Lipedema Project, is the producer and director of the documentary The Disease They Call FAT. She traveled the world interviewing patients, doctors, surgeons, researchers, scientists, and experts looking for answers to the little-known and generally misdiagnosed fat/lymphatic disorder lipedema. Dr. Seo is also co-author of Lipedema: The Disease They Call FAT-An Overview for Clinicians, From Our Coaches’ Kitchens: Ketolicious for Lipedema Holiday Cookbook, and Every Day Keto for Lipedema (coming out December 2021).

Dr. Seo has been an executive coach for 30 years. Since 2012, she has dedicated her focus, and passion to defining, understanding, and developing support for women with lipedema, lymphedema, and obesity. In 2016, she partnered with Dr. Leslyn Keith, OTD, CLT-LANA, author of Ketogenic Solution for Lymphatic Disorders, The Lymphatic Code (publishing September 2021), together bringing a ketogenic lifestyle to those with lipedema with significant results in reducing weight, volume, swelling and eliminating the pain usually associated with lipedema.

Hill

Dr Peter Hill PhD, earned a doctorate in patient behaviour in Type 2 diabetes mellitus at Rhodes University in South Africa.

Part of his doctoral studies included undergoing training in Chronic Disease Self-Management at the Patient Education Centre at Stanford University in the USA.

His post-doctoral studies, practice, teaching and research are focused on the role of self-care in preventing and treating chronic diseases of lifestyle such as obesity, Type 2 diabetes, high blood pressure, etc.

He taught a number elective courses focused on chronic disease self-care, conducted a number of self-care workshops and mentored more than 150 nurses and health coaches employed in the private healthcare sector in South Africa.

Laurent

In addition to clinical psychotherapy, I am trained in nutritional therapies for mental health and neurological disorders. My certifications include a Post-Graduate Certificate from Maryland University of Integrative Health in Nutrition and Integrative Health and I have completed training as a Certified Mental Health Integrative Medicine Provider (CMHIMP).

I have training in Therapeutic Carbohydrate Restriction from DietDoctor and I have successfully transitioned many patients to ketogenic and low carbohydrate diets using evidence-based therapies for behavioural change.

Practice in nutritional therapies for mental health is done through a psychoeducational and behavioural change lens for clients interested in pursuing improved mood and function.

This can be in working to increase the nutritional quality of one’s current diet or even transitioning to a ketogenic diet which is used successfully with a variety of psychiatric disorders.

Dr Emma Rossato is a GP based in Townsville who is passionate about low carb way of living – improving metabolic health, reducing inflammation and general well-being.

I am a New Zealand Registered Dietitian and Nutritionist and have worked in a variety of areas including hospitals and private practice. My background and training in the past has been in the standard medical model which focused on the standard dietary guidelines for health and treatment of conditions such as Diabetes, Cardiovascular Disease and Weight Management. However, I no longer follow these guidelines.

A few years ago I came to the realisation that the standard  approach was not working and was possibly doing more harm than good for some of my clients. My clients reported that despite following the recommended plan they had ongoing issues with weight gain, poor blood sugar control, increasing medications and feeling unwell.

So I began to research the latest evidence based science relating to the ideal nutrition approach for those with Insulin Resistance, Metabolic Syndrome and Diabetes.

This research led me to undertake updated  training and self-experimentation  and enabled me to develop a more Holistic or Integrated approach to health with a focus on using whole foods and considering aspects of Mind, Body and Spirit or Emotional Health to support my clients with their health. Every client is listened to as an individual. This can be called an Integrative or Holistic nutrition approach.

Although there is no one diet that suits all, there are general principles that apply. A whole foods approach uses foods in their most natural form. Generally these foods do not come in packets, do not have artificial ingredients or preservatives added, are naturally low in sugar, carbohydrates and gluten as well as being naturally higher in healthy fats. These foods are super high in the nutrients that everyone needs to thrive and be healthy.

Using real food as medicine is very powerful and can help support the body to heal itself. My approach is to empower my clients to be find the best way to eat for their needs as well as to enable them to lose excess weight, gain energy, easily control blood sugars, improve memory and brain function, and improved digestion. Overall the result is improved resilience and enhanced immune performance or overall well-being. Many of my clients have been able to reduce, stop or avoid the need for prescription medications. They also report feeling finally free from the treadmill of restrictive weight loss dieting and excessive cardio exercise to try and burn fat. They are able to take back control of their own health.

I offer both face-to-face and Telehealth options for clients and accept self-referrals as well as referrals from Health Professionals.
